- 2 tablespoons light brown sugar
- ½ cup walnuts, coarsely chopped
- 1 pound jumbo peeled, deveined raw prawns
- 1 tablespoon manuka honey
- 2 tablespoons extra-virgin olive oil, divided
- 2 ½ tablespoons mayonnaise
- 1 tablespoon lemon juice
- ½ teaspoon ground pepper
- ¼ teaspoon salt
- ½ cup sliced green onions
- 2 cups hot cooked brown rice

In a large nonstick skillet over medium heat, combine the water and brown sugar. Simmer for about 2 minutes, stirring until the sugar fully dissolves. Add the walnuts, cooking and stirring frequently until they are golden and caramelised, about 2 minutes. Transfer the walnuts to a parchment-lined plate to cool. Wipe out the skillet.

Toss the prawns with honey and 1 tablespoon of olive oil in a bowl. Heat the skillet over medium-high heat and add the shrimp mixture. Cook, stirring occasionally, until the shrimp are browned and cooked through, about 4 minutes. Remove from heat.
