Prawns with Manuka Honey

Ingredients

  • 2 tablespoons water
  • 2 tablespoons light brown sugar
  • ½ cup walnuts, coarsely chopped
  • 1 pound jumbo peeled, deveined raw prawns
  • 1 tablespoon manuka honey
  • 2 tablespoons extra-virgin olive oil, divided
  • 2 ½ tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • ½ teaspoon ground pepper
  • ¼ teaspoon salt
  • ½ cup sliced green onions
  • 2 cups hot cooked brown rice

Directions

  1. In a large nonstick skillet over medium heat, combine the water and brown sugar. Simmer for about 2 minutes, stirring until the sugar fully dissolves. Add the walnuts, cooking and stirring frequently until they are golden and caramelised, about 2 minutes. Transfer the walnuts to a parchment-lined plate to cool. Wipe out the skillet.

  2. Toss the prawns with honey and 1 tablespoon of olive oil in a bowl. Heat the skillet over medium-high heat and add the shrimp mixture. Cook, stirring occasionally, until the shrimp are browned and cooked through, about 4 minutes. Remove from heat.

  3. In a small bowl, whisk together the mayonnaise, lemon juice, ground pepper, salt, and the remaining 1 tablespoon of olive oil. Add this creamy mixture to the prawns in the skillet, stirring to coat evenly.

  4. Sprinkle the dish with the caramelised walnuts and sliced green onions for a final flourish. Serve with brown rice for a satisfying, skin-loving meal.
